Join Nichole for Part Two of The Cake Decorating Journey, where we’ll take the cake layers you learned to create in Part One and turn them into a properly filled, stacked and beautifully frosted cake.
This two-hour, hands-on class is all about one of the most important foundations of cake decorating: construction.
Nichole will teach you how to make scratch buttercream, understand the consistency you need for different jobs, properly torte and fill cake layers, build a stable cake, crumb coat and create a smooth buttercream finish.

• Nichole’s scratch buttercream recipe
• How to achieve the right buttercream consistency
• How to flavor and color buttercream
• How to avoid and remove pesky air bubbles
• How to properly torte cake layers
• How to create a buttercream dam and add fillings
• How much filling is actually enough
• How to stack straight, even cake layers
• How to prevent slipping, bulging and uneven cakes
• The purpose of a crumb coat, and how to do it correctly
• When and why to chill your cake between steps
• How to apply your final buttercream coat
• How to use a turntable, offset spatula and cake scraper
• Techniques for creating smooth sides and clean edges
• How to troubleshoot common buttercream and frosting problems
Each guest will work hands-on to torte, fill, stack, crumb coat and frost their own cake while Nichole walks you through the process step by step.
